Ales

Ale

Brewed with top fermenting yeast at cellar temperature, ales are fuller-bodied, with nuances of fruit or spice and a pleasantly hoppy finish. Generally robust and complex with a variety of fruit and malt aromas, ales come in many varieties. They could include Bitters, Milds, Abbey Ales, Pale Ales, Nut Browns, etc.

Ales are often darker than lagers, ranging from rich gold to reddish amber. Top fermenting, and more hops in the wort gives these beers a distinctive fruitfulness, acidity and pleasantly bitter seasoning. Ales have a more assertive, individual personality than lager, though their alcoholic strength is the same.

Lagers

Lager

Lager originates from the German word lagern which means 'to store' – it refers to the method of storing it for several months in near-freezing temperatures. Crisp and refreshing with a smooth finish from longer aging, lagers are the world's most popular beer (this includes pilseners).

A lager, which can range from sweet to bitter and pale to black, is usually used to describe bottom-fermented brews of Dutch, German, and Czech styles. Most, however, are a pale to medium colour, have high carbonation, and a medium to high hop flavour.

Stouts & Porters

Stouts & Porters

There’s very little distinction between a Porter and a Stout, but they do have their differences.

Porter is a dark, almost black, fruity-dry, top fermenting style. An ale, porter is brewed with a combination of roasted malt to impart flavour, colour and aroma. Stout is also a black, roast brew made by top fermentation.

Stout, not as sweet to the taste, features a rich, creamy head and is flavoured and coloured by barley. Stouts often use a portion of unmalted roasted barley to develop a dark, slightly astringent, coffee-like character.

Malts

Malts

Malt liquor, in North America, is beer with high alcohol content. Legally, it often includes any alcoholic beverage with 5% or more alcohol by volume made with malted barley. In common usage, it refers to beers containing a high alcohol content, generally above 6%, which are made with ingredients and processes resembling those for American-style lagers.

While Colt 45, St. Ides, Schlitz, Mickey's, Steel Reserve, King Cobra, and Olde English 800 are most closely associated with malt liquors in the United States, the beverage itself is older than these products.

Also closely associated to this are what are called "Alcopops".  They are not technically Malt beers but these are malt beverages. Flavored malt beverages exhibit little or no traditional beer or malt beverage character. Their flavor is derived primarily from added flavors rather than from malt and other materials used in fermentation. At the same time, flavored malt beverages are marketed in traditional beer-type bottles and cans and distributed to the alcohol beverage market through beer and malt beverage wholesalers, and their alcohol content is similar to other malt beverages in the 4-6% alcohol by volume range.

Grand Canyon Spirits stocks a large selection of both of these types of alcohols.

White

White

There are many varieties of white wines available out there, and you’ll find that we carry many of those varieties. The most common white wines are Chardonnay, Pinot Grigio, Sauvignon Blanc and Riesling, among many others. Chardonnays can be full-bodied and oakey flavored, and some are more velvety with fruit, nut or vanilla flavors. Pinot Grigios are usually light, and with pear flavorings, and tend to pair well with seafood and light foods. Sauvignon Blancs pair well with just about anything, and are a very light and crisp wine. Rieslings can be very dry or very sweet, and pair well with Asian food, and can taste quite good with spicier foods as well.

Red

Red

Similar to white wines, there are SO many options for your choosing of red wines. We also carry many choices, and we’re happy to look into finding one you’d like if we don’t already carry it. Some of the most common red wines are Cabernet Sauvignon, Merlot, Pinot Noir, Syrah, and Zinfandel. Cabernet Sauvignons are known for being a thick and oakey wine, that pair well with red meats. The Merlot is easy to like, pairs well with just about anything you decide to drink it with, and can have fruity or herbal flavors to it. The Pinot Noir often has a fruity taste, with notes of tea-leaf, and pair well with salmon, chicken or lamb. Syrahs are typically dark-fruit tasting, pair well with red meat and are typically intense in flavor. Lastly, the Zinfandel varies so much as the grape can make many different types of wines from a blush to a heavy red. It pairs well with many types of foods because of its variability.

Rose

Rosé

Rosés incorporate some of the color of the grape skin, but not enough to make it a pure red wine. Rosés are made when the skins of the grape are only stained for a few hours, compared to the weeks it takes for the grape skins to stain for a red wine. This means any red grape used to make a red wine is used to make a rosé, and the winemaker has complete control over the color of this wine. Rosés tend to be fruity or citrusy with a crunch green flavor, such as celery. They can pair well just about anything depending on what type of rosé you choose to try!

Sparkling

Sparkling

Sparkling wines undergo two fermentation stages, whereas regular red, white or Rosé wines go through one fermentation stage. The second stage is what makes the bubbles that are so known to the sparkling wine. There are four styles of sparkling wine: dry and zesty (typically made from Chardonnay or Pinot Noirs), light, dry, fruity and floral (popularly made with Pinot Griogio), sweet and perfumed (typically made from Moscato), and rich, creamy, and nutty (fermented longer in oak barrels and cost the most of all the styles). You’ll find that Brut, Prosecco, and Reserva are the most common sparkling wines.

Whiskey

Whiskey

We’re proud to offer a huge selection of whiskey-in fact, we’ve come to be known for our amazing whiskey finds. When it comes to whiskeys, there are so many options, too. Of course, there are your Scotches (from single malts to blended grains), your Irish Whiskeys that must come from Ireland, your American Whiskeys (bourbon, rye and Tennessee whiskey) and Canadian and world whiskeys.

Scotches come from Scotland and must age for a minimum of three years, are aged in bourbon barrels and are distilled twice. Irish Whiskey differs from Scotch on how its made as it’s triple distilled, and the distillers often introduce enzymes to change the starches to sugar before fermentation even begins. Of the American Whiskey types, bourbon is made up of at least 51% corn and is aged in charred, new oak barrels. Rye whiskey is made up of at least 51% rye, and is also aged in charred, new oak barrels. Similar to bourbon, Tennessee Whiskey must meet all the requirements of a bourbon, but must be produced in Tennessee. Most Canadian whiskeys are considered rye whiskeys, although they they may be made of mostly corn and note rye. Of the world whiskeys, Japanese whiskey has become very popular lately, with similarities to Scotch, but offers more variety.

Rum

Rum

Rum is a fermented and distilled product made from sugarcane in many forms, such as molasses. There are light rums and dark rums. Most light rums are commonly used for cocktails, whereas dark rums are most commonly drank straight or on the rocks. Most rums are made in the Caribbean or Latin America, but are also made in various other places around the world, including the United States.

Vodka

Vodka

Vodka is one of the most popular cocktail mixer, and you’ll find that there are many types, brands and tastes to vodka. The standard method for making vodka is to ferment and distill various types of grains-most commonly rye, corn and wheat. It is often distilled three times, but can be distilled many more times than that, and vodka distillers will often tout how many times their product has been distilled. The more times it’s been distilled, the cleaner and smoother the taste. After being distilled, it is then filtered through charcoal, and is then ready to drink.

Gin

Gin

Gin was originally created on accident when a doctor was trying to make an elixir to cleanse the blood for kidney failure patients. Since then, it spread like wildfire around the world. Gin is distilled and made of a mash of cereal of grain-typically corn, rye, barley, or wheat. Gin also has botanicals introduced during the distilling phase, and juniper berries are most commonly used. There are many types of gin, including London Dry Gin, Plymouth Gin, Old Tom Gin, Genever, and New Western Dry Gin.

Tequila

Tequila

Originating in Tequila, Mexico, tequila can still only be made in select areas of Mexico. Tequila is made by distilling the fermented juices of the Weber blue agave plant. There are five types of tequila; type 1 are called blanco, silver or white tequilas (rarely aged and have an earthy flavor), type 2 are called joven or gold tequilas (also unaged, commonly mixed with caramel), type 3 is called reposado tequila (typically aged for two to nine months in wood casks, which creates a full, oak flavor), type 4 is called anejo tequila (aged in French oak or used bourbon barrels for a minimum of one year, best to be sipped straight), and type 5 is called extra-anejo tequila (aged at least four years in the same barrels as the anejo tequila, producing a high quality tequila made to sip straight). You’ll know you’re getting a real tequila when it says made 100% in Mexico.
